At 78 years old, Hermes Martinez is still an energetic coffee producer. Farming a very large farm by Narino standards, he Pedregal is 40 hectares and planted with Colombia and Castillo with a total of nearly 100 000 trees. In times of drought or variable rainfall, Hernan is able to use a spring on Pedregal for irrigation.
Nearby the Galeras volcano, the soil at Pedregal is «tierra negra» – black land – and to what Hernan attributes the high cup quality. At the peak of harvest nearly 90 pickers work this farm, and in recent times prices for cherry selection have increased with labor shortages and rising wages for pickers.
Depulped and dry-fermented for 24 hours, Hermes is a masterful producer creating consistnent and vibrant coffees at a scaleable level.
